What’s in a Foodie’s Fridge?

These are the makings of a happy cook.

Some days after school I hear the words, ” there is nothing to eat”. After quick examination of this messy foodie fridge, they could be right. It’s filled with all the makings of great meals. Nothing is quick unless you like lemons or pickles at your first glance.

There are quick snacks. I just have to convince and show them that left over risotto is amazing when you make them into patties and fry them in a little olive oil. Or, how to assemble the left over roasted turkey (up in the far left corner of the fridge) with the mayo on rye bread with a slice of provolone, topped with red peppers and toasted under the broiler -yum!

The salad options are my favorite. Three different kinds of lettuces, avocados, red peppers, broccoli, eggs, sunflower seeds, assorted cheeses and all the ingredients for homemade dressing. My favorite dressing is so simple;

Lisa’s Simple Homemade Salad Dressing

1 tablespoon of honey

3 tablespoons of sherry vinegar

1 tablespoon of coarse ground mustard

2 tablespoons of fresh lemon juice (explains all the half cut up lemons in the fridge)

1/2 a clove of garlic, mashed fine

1/4 – 1/2 tsp of salt

1/4 cup of olive oil

And couple turns of the pepper mill

Place all the ingredients in a covered container and shake. You can adjust it to your liking -more honey or less vinegar. Play around with it and come up with your own special recipe and let me know what you did. We can post it on wild-chow.

I know it’s a little over the top to have four different kinds of yogurts and three different kind of mayo. But, I can tell the difference when I am making certain things (the husband would disagree). The same is true of mustard and I currently have 5 different kinds. The wine is crucial to stews and braising. Considering, we are experiencing the longest winter known to man, it’s the only food that warms you up to the core and the options are endless. Ah-ha, maybe a New cook book idea!

Yes, we eat a lot of meat. Currently there are two t-bone steaks in the drawer(white paper wrapped), a large ham(big plastic bag), roasted turkey(top left), pork roast(small plastic bag), taco meat(Tupperware container), trout, and 2 different kinds of sausages. With 4 boys, it seems like the only thing that will fill them up for more than a half an hour is meat.

Tonight’s dinner will be, wine braised pork roast with caramelized carrots and onions. Slow roasted pinto beans with bacon and a walnut salad topped with meyer lemon dressing! I’ll get to it right after I get done reorganizing  the fridge..it’s a little embarrassing! I might even post the pics tomorrow. Stop back and see!
