Check out this super easy Elk open face sandwich!
In a crock pot, put equal of amounts of beer and onion, about 1/2 a cup of each. Add, 1 tablespoon of coarse ground mustard, 1-2 tsp of salt, 1 tsp garlic, and 1/4 cup Brown sugar. Mix together and add the 1-2 lbs of raw elk meat. Turn meat to coat and cover and simmer for the day (8 hours) on low.
Serve on top of crusty bread with horse-radish sauce on the side. Pair it with a side salad, glass of white wine and botta bing, dinner is served!
